Sweet and sour, this vinegar was made in a style to mimic balsamic. It starts with F-Word Farm grown garlic that takes 9 months to grow and another few months to cure and turn into black garlic. Black garlic is a caramel-y/molasses-y rich flavor that is created by the caramelization of the sugar naturally present in garlic. Then it enters a nearly year long ferment, resulting in a vinegar with some residual sweetness and complexity from the black garlic. Great paired with soy sauce and any dishes that utilize it.
